Has anyone had any luck applying to a job posting that’s for a FT direct hire role and been able to get a freelance contract out of it?
Not recently. But in the past I would offer Temp to perm so I could try out the company first. Sometimes it worked, sometimes it didn’t.

It definitely can work. At the very least, you have a new connection. I’m not opposed to a full time position, but now with Covid, a lot of people are working at home, and that opens companies up to freelance more.
